It’s the ultimate high-low marriage; a salty, briny combination that pops with each bite, combined with silky creme fraiche to make it all the more indulgent. 

If you can’t make it to Petrossian’s caviar café, why not make it at home? Grab a bag of potato chips (lightly salted is best), dab on some creme fraiche or sour cream, and dollop a bit of caviar on top.
